Mac
][vi Apple Sauce
1 cup Granulated sugar
2 cups Water
Orange Zest from one Orange
Lemon Zest
2 Cloves
1 Cinnamon Stick
3 lbs. Macintosh Apples (peeled, cored, and sliced)
In a large pot, mix the Sugar and Water. Add the Cloves, Cinnamon, as
well as the Orange and Lemon Zests. Using medium heat, bring to boil and
then let simmer for about 5 minutes. Lower heat, add the Macintosh Apples
and stir every 15 minutes.
Cook 30-40 minutes, or until smooth.

Cranberry
Conserve
16 ounces Cranberries
3 cups Granulated Sugar
1 Orange
Orange Zest
3/4 cup Raisins
1 cup Water (or Orange Juice)
1/2 cup Slivered Almonds or Walnuts
Wash Cranberries and add to medium sized pot. Cover with Sugar, Orange,
and Orange Zest. Add the Water (or Orange Juice). Cook over medium heat
for 30-45 minutes, until thickened. (stirring occasionally). Remove from
heat and mix in Almonds or Walnuts. Let cool.
Store in refrigerator or freeze for future use.

Peach
Jam (Very Easy)
2 quarts fresh cut Peaches
1/2 cup Water
- boil for 10-minutes
6 cups Sugar
- cook for 45-minutes
2 tablespoons Vanilla
Wash, split and peel Peaches. Crush using a potato masher, then place
in a saucepan, heat to boiling. Boil for 10 minutes. Add the Sugar and
continue to cook until thick, approximately 45 minutes. Add the Vanilla
and then put in sterilized jars. Cool and store in refrigerator.

Guacamole
Dip
2 ripe Avocados
Juice from 1 Lemon
1 medium Onion, minced
1 clove Garlic, crushed
1/2 teaspoon Chile Powder
1/2 teaspoon Salt
1 teaspoon Worchestershire Sauce
1 firm Tomato, chopped
Mash Avocados with
Lemon Juice. Stir in remaining ingredients and mix well. Cover with Saran
Wrap and chill in refrigerator.

Smoked
Salmon Pate
1/2 lb Smoked Salmon,
diced
1/2 cup Salted Butter, softened
1/2 cup Onion, finely diced
1-1/2 teaspoons Capers, drained
2 tablespoons Heavy Cream (35% m.f.)
2 tablespoons fresh Lemon Juice
1 tablespoon Dijon Mustard
a few dashes of Tabasco Sauce
Combine all ingredients
in a food processor and process until smooth, frequently scraping down
the side of the bowl with a spatula. Spread pate onto serving dish, cover
with Saran Wrap and refidgerate. Garnish with additional Capers, Cracked
Black Pepper and thinly sliced Smoked Salmon, if desired. Serve with 'toast-points,'
assorted crackers, and or fresh bagels. Yields 2 cups
